Collagen Chocolate Covered Strawberries

I have a confession to make. I love chocolate covered strawberries. Sadly, they are traditionally made with some not-so-lovely ingredients. I decided to embark on a journey to make some that were as healthy as they were delicious. The journey led me to my kitchen cabinet despite the odds stacked against me.

On another note, like my chocolate covered strawberry fetish, anything that you enjoy that you think is unhealthy, you can make healthy and tasty. It is never that healthy food tastes bad; instead, it’s a lack of creativity to make it tasty. Glad we got that out of the way.

Now I have to admit, I’m pretty lazy when it comes to food. Complex recipes filled with extravagant ingredient lists and confusing time intervals overwhelm my man brain. Most of the time when I want something, I want it then not later. Also, as a father of two, having healthy, fast, easy, and delicious recipes are crucial to performing my best without taking too much of what precious little time that I have to spend with my family at the end of each day.

Sincerest Apologies

Before I go into the recipe, I have a few apologies. The concoction you are about to read about has a nice balance of fat, carbs and protein. And so I say “sorry” to the keto/ low carb community. This one likely won’t fit your macros. But it could. Substituting honey for alternative sweeteners like stevia or erythritol should keep your insulin response as low as the carb count. You likely aren’t eating much fruit, but a few strawberries won’t kill you.

Second, sorry to all the vegans out there because, doggone it, collagen simply is not plant based. It’s all animal. That being said, you could easily swap out the collagen for a chocolate pea protein and retain your loyalty to the movement. As far as the honey, I must ask for forgiveness of my ignorance because I don’t know how to place bee products in the vegan approach. Bees make honey and while they aren’t plants, they also aren’t animals because they are insects. I suppose you can just make a judgement call and substitute stevia if additional sweetness is even needed.

Nearing the end of my apologies, I would like to send some love to the paleo community. This dish could easily fit the paleo diet, but I just didn’t want you to feel left out. Second to last, for all the carnivores out there, I assume if you slap this on a juicy rib-eye, you’ll be in compliance. Finally for all the fasters, I know you know what to do with this recipe. With that, I hope I kept everyone happy.

The Recipe, Finally

Collagen Chocolate Covered Strawberries

  1. 1 Tbs of organic, unrefined coconut oil
  2. 1 tsp of preferably local, raw honey
  3. 1 tsp of ceylon cinnamon
  4. 3 scoops of chocolate collagen powder

Macros

Calories: 282

Fat: 14g

Carb: 12g; 6g of Sugar

Pro: 27g

It goes something like this: heat the coconut oil and honey. Mix them together. Add cinnamon and collagen. Mix it up.

At this point, you may be like me and just say enough is enough and just go dipping strawberries or bananas in it. This recipe can double as a fruit dip (just don’t double dip) making it great for parties. You can go the distance as the title indicates and dip the strawberries and refrigerate them allowing the coconut oil to harden and create the ideal chocolate covered strawberry look and mouthfeel you want. Either way you slice it, you have yourself a healthy-whatever that means to you-recipe to build off of and enjoy. One final thought: I suspect if you aren’t a chocolate lover like my wife, you could use vanilla based ingredients and make vanilla collagen chocolate covered strawberries. This recipe has the ability to make every mouth happy.
